Default Software for project work flows and process maps: Visio or other tools?

I'm designing an NGS project and would like to show the steps in a visual manner, including tasks, scientists' names, and software choices over the course of the project.

Would Visio be a good tool for this? Have you found certain Visio templates to be especially useful for NGS work flow and process mapping?

Default Free programs

If you would rather prefer free / open source programs, then give these a spin:
  • dia -- for flow diagrams, etc
  • inkscape -- more general drawing program
  • scribus -- desktop-publishing program
